不需要,其实葡萄中最有营养的是葡萄皮和葡萄籽 ,最好不好把皮去掉,这样就会失去部分营养价值,因为葡萄皮中有抗氧化的元素,所以不去皮酿酒是好,葡萄酒都不去皮的,很简单,皮含有单宁,可以养颜。皮有色素,决定了红酒的颜色。皮含有的单宁,决定了这款酒口味的基调。葡萄酒不是果酒,没有皮就没有了深度。这个回答,同时告诉了你红白之分。其实白葡萄酒也可以不去皮的,只是种类不一样,简单的说白葡萄酒是白葡萄酿的,红葡萄酒是红葡萄酿的。红葡萄品种有赤霞珠,梅洛等,白葡萄么有雷司令,长相思等。

为什么用熟葡萄,就引用楼上说的葡萄酒发酵的原理是酵母将葡萄中的糖转化成了酒精,所以酿酒时肯定要用熟葡萄。
