用石膏点的豆腐比较细嫩。豆腐分南豆腐和北豆腐,南豆腐是用石膏作为凝固剂的,豆腐色泽白,非常嫩。而北豆腐是用盐卤或者葡萄糖酸内脂作为凝固剂的,称老豆腐、硬豆腐,色泽相对发黄,比较老,其特点是硬度、弹性、韧性较南豆腐强,口味较南豆腐香,而含水量较南豆腐低。追问

豆浆要磨细,水要多放,这样过滤出来的豆腐就会细腻

做豆腐的时候少放点石膏粉,压的时候时间短一点就OK了。
