此时能否用i'm flattered表示不敢当，或者用never mind表示不客气，来回复？

不能，你可以用 It is just a silly show,(过奖了） 或者 you are welcome,（不客气） 或者， It's my pleasure.（不用谢），还可以用 Don't mention it.(小事一桩）来回答。
I'm flatter 这种用语给人的感觉有点像你谢谢了人家，人家受宠若惊的感觉。never mind 表示不必介意，不合适。
