这是一道养生素菜,颇有几分红烧蹄膀的神韵。但原材料却是百分百的素菜。这道菜把具有养胃功效的鲜猴头菇打碎成泥,酿到冬瓜中,然后长时间蒸入滋味,最后浇上红汁,卖相颇似红烧肉,吃起来咸鲜、水润,还透着菌鲜,极其适口。
用料 :冬瓜 500g 猴头菇 2个 荸荠 8个 小青菜心 8个 八角 2个 料酒、老抽、白胡椒粉、盐、味精、香油 适量 水淀粉、红曲米 适量

猴头菇清水泡发,剁碎。荸荠剁碎,放入料酒,盐,白糊椒粉,味精调味拌匀备用
