I will stop working until 6:00.这句中
到了六点，我才会停止工作。时间到六点就是我停止工作的条件。条件满足我做某事时，不用not.
反之，I will not work until 6:00.
这句中是一到六点，我就不工作。工作与到六点这个条件矛盾，就要用not.

until是一直 没有"才"的意思
譬如
I did not go to sleep until my mother come back.
意思是我直到妈妈回来才睡觉 妈妈不回来就不睡

I slept ntil mother come back
意思是我一直睡,睡到妈妈回来
