Today, my mother prepared to cook my favorite braised fish. I witnessed the whole process of my mother washing the fish.
First, my mother gathered the necessary ingredients: carp, onions, ginger, garlic, sugar, soy sauce, cilantro, rice wine, salt, cooking oil, and green peppers. After gathering these ingredients, she began to wash the fish. I saw her use a knife to scale the fish, then remove the fish gills, and clean the fish belly by puncturing the bubble and removing all the debris. Once the fish was cleaned, she made a few shallow cuts on it.
Next, my mother heated the pot and added a little oil to coat the pot. Then she poured in a small amount of cooking oil and fried the fish after the pot was hot. She also added some rice wine to remove the fishy smell. To add color, she poured a teaspoon of sugar and a little soy sauce. The fish was then submerged in cold water, with green onions, ginger, garlic, and pepper added, and cooked over medium heat for 40 minutes before adding parsley. Finally, a pot of delicious braised fish was ready under my mother's care.
