面筋是一种植物性蛋白质。是将面粉加入适量水、少许食盐,搅匀上劲,形成面团,稍后用清水反复搓洗,把面团中的活粉和其它杂质全部洗掉,剩下的即是面筋。油面筋用手把面筋团成球形,投入热油锅内炸至金黄色捞出即成。
